This recipe is an Anxious Angie first that I created with no help from the internet whatsoever, and I’m very proud with how these turned out! It features pistachios, fresh lime, shredded coconut, and dates. These ingredients each taste great on their own, but when combined, they create a taste explosion bursting with layers of flavor in every bite!

In the first step, all ingredients are processed for up to a minute in a food processor. The end result should have a sticky texture and look something like this:
For the coating, I’ve provided two options: shredded coconut and pistachios. You can choose whichever you prefer, or combine both like I did (or use another coating of your choice).
Shape the mixture into 1-inch bites, and roll around in the coating, one at a time, using a fork.
This recipe made 20 bites. Depending on the size you make them, you may end up with a few more or less.
Even though the lighting in my kitchen, lack of professional camera equipment, and my food presentation skills really suck(!), hopefully you’ll get an idea how good they turned out. 👌

These tasty treats pack loads of flavor in every bite! They are great as a quick pick-me-up or a snack on the go.
- 8 Medjool dates, pitted
- 1 cup pistachios
- 2 tablespoons fresh lime juice
- 2 tablespoons pure maple syrup
- 2 tablespoons coconut oil
- 1/2 teaspoon vanilla extract
- 1/4 cup pistachios, chopped
- 1/4 cup shredded coconut
Place all ingredients into bowl of food processor, and process for up to two minutes until well blended and a sticky mixture forms. Stop to scrape down bowl as needed. If necessary, mixture can be transferred to a small bowl and refrigerated for 30 minutes or so, until firm enough to work with.
Shape mixture into 1-inch bites using either a small cookie scoop or hands.
Roll bites in preferred coating, one at a time, using a fork; make sure to coat evenly.
Store in an airtight container, and keep refrigerated for up to a week.
For freshest flavor, consume within 5 days.
