Here’s another recipe I’ve made several times that has quickly become one of my favorites. It’s a chickpea dip made with chocolate chips, homemade peanut butter, oats, coconut, and homemade cashew milk that’s healthy, satisfying, and surprisingly delicious! Chickpeas are an excellent source of fiber and protein, and they contribute to the wonderful texture of this fabulous dip. Even though undetectable, just knowing they are in there makes me feel good about eating it.
This is a Chocolate Covered Katie recipe that I’ve modified slightly. I always omit the baking soda (just don’t see a need for it), but this time, I added coconut oil to the base and topped it with peanuts and coconut chips, as well as extra chocolate chips. This version is my favorite to date. It wasn’t intended for the blog, but I decided literally last second to include it (before diving in).
Since this nutritious, satisfying dip contains heart-healthy chickpeas, it really can be eaten any time of day and not just for dessert. I’m craving some right now, so I think I’ll go make a batch. 🤤

This chickpea dip is an excellent source of fiber and protein, not to mention extraordinarily tasty and filling! Great with graham crackers or eaten by itself.
- 1 1/2 cups chickpeas, rinsed and drained very well
- 1/8 teaspoon sea salt
- 2 teaspoons pure vanilla extract
- 1/4 cup peanut butter (or nut butter of choice)
- up to 1/4 cup cashew milk (or milk of choice)
- 2-3 tablespoons pure maple syrup
- 3 tablespoons organic quick oats
- 2 tablespoons coconut oil, melted
- 1/3 cup chocolate chips
- Optional toppings: chopped nuts, shredded coconut, extra chocolate chips
Place all ingredients (except the chocolate chips) in food processor bowl. Process until smooth (up to 2 minutes).
Stir in chocolate chips.
Serve as is or with graham crackers. Add toppings as desired.
Store leftovers in refrigerator and consume within a few days (if it lasts that long).
